N\u00e9anmoins des traitements d\u00e9truisant la structure cristalline des grains d\u2019amidon sont n\u00e9cessaires lorsque des produits amylac\u00e9s sont incorpor\u00e9s dans les aliments pour jeunes animaux ou carnivores (Champ, 1993). Cette modification de la structure de l\u2019amidon (diminution de la cristallinit\u00e9, d\u00e9polym\u00e9risation, augmentation de la surface sp\u00e9cifique) se traduit chez ces animaux par une augmentation de la digestibilit\u00e9 de ce constituant.<\/p>\n<p>Dans la litt\u00e9rature technique, plusieurs termes sont utilis\u00e9s pour exprimer les modifications de l\u2019\u00e9tat structural de l\u2019amidon sous l\u2019action des traitements.
